A yummy apple and cardamom cupcake! The crushed cardamom complements the apple flavour and makes it so yummy and you would just be like me – Can’t eat just one and reach out for the next one. Enjoy!

This yummy Apple and cardamom cupcake can be made with plain flour and gluten free flour. There is Vegan option also – 1 tablespoon of ground flaxseed and 3 tablespoons of water to replace 1 egg or else use the Egg replacer as per the pack instructions ( link in Recommended products.)

I made this cupcake as part of this cupcake platter recipe, link – Cupcake platter (Gluten free and Vegan option also) If you would like to make only specific flavours top up the cupcakes only with your chosen ingredients. For each individual cupcakes, please go through the detailed step by step instructions and pictures which will help you bake these cupcakes,  link – Cupcake platter (Gluten free and Vegan option also)

YUMMY APPLE AND CARDAMOM CUPCAKE

A yummy apple and cardamom cupcake! The crushed cardamom complements the apple flavour and makes it so yummy and you would just be like me - Can't eat just one and reach out for the next one. Enjoy! This yummy Apple and cardamom cupcake can be made with plain flour and gluten free flour.

Ingredients

  • Dry ingredients
  • 1⅓ cup (150g) Self-Rising flour (or gluten-free Self-Rising flour)
  • 1 teaspoon baking powder (use gluten free for gluten free option)
  • ¾ cup (150g) sugar
  • ¼ teaspoon salt
  • 1 tablespoon crushed cardamom seeds (or 1 tablespoon cardamom powder)
  • Wet ingredients
  • ⅓ cup + 2 teaspoons (90ml) Vegetable oil (Sunflower oil)
  • 1 - 2 small apples (144 grams) chopped into small pieces (or grated)
  • 2 medium eggs ( Vegan option - 1 tablespoon of ground flaxseed and 3 tablespoons of water to replace 1 egg.)

Instructions

1.     Pre-heat oven to 400°F (180°C Fan – 200°C – Gas 6). 

2.     Prepare 12 silicone cupcake moulds. Alternatively use a 12 cupcake tray with cases.

3.     Mix well all the listed dry ingredients in one bowl.

4.     Mix well all the listed wet ingredients in another bowl.

5.     Then mix both wet and dried ingredients until just combined. Do not over mix as it will result in a dense cupcake.

6.     Pour the mixture into the prepared cupcake cases.

7.     The mixture should not be more than 3/4th of the case.

8.     Bake for 22 - 30 mins until a skewer inserted into the middle of each cupcake comes out clean.

9.     Un-mould from the silicone cases and leave to cool completely on a wire rack.

10.   I used store bought Betty Crocker Vanilla Buttercream Style Icing. The cupcakes taste great without icing too!

Note : To make self-rising flour - Add 2 teaspoons of baking powder for each 150g / 6oz / 1cup plain flour. Add the flour and baking powder into a bowl and whisk well. Use this self rising flour as part of the dry ingredients listed above.

Have money, position, power, good family.. what about the soul?

Most of us have something which we always think/ care about the most. For most, it can be money. The love for money is deep embedded within most of us. For some, it can be a high position or power.  If there was no love for power  or money, many of the wars wouldn’t have occurred. For some it can be their own family which is the priority for them. Love you family, that’s good. But is that all to it?

 For what shall it profit a man, if he shall gain the whole world, and lose his own soul? – Mark 8:36

This is what God says.

When a baby is born, there is a date set for the soul to be returned to the giver of the life. It’s a fact that all of us would die one day. That doesn’t change if you are rich or poor. It’s a law which is true for all human beings. So what happens after death? Should we think about what happens after death? Shouldn’t we just focus on the current life? We as humans tend to think forward. That’s the reason why we try to earn more money to make future secure. We think in advance and ensure that we have health insurance so that an emergency is taken care of. So we do think in advance..

What about our soul? What when our breath stops? We leave all the money, position, family and everything which we accumulated in this life span. It’s a FACT that we came into this world empty handed and would leave this world empty handed. Our soul returns to the God Almighty.

Everything we did in this short life on earth we would need to give an account for. Can we live our lives just as the way we desire and not reap the consequences? As we sow, so shall we reap.

The parable of Lazarus and the rich man is meant to teach us that there is a life after death.  

Luke 16:19-31

19 There was a certain rich man, which was clothed in purple and fine linen, and fared sumptuously every day:

20 And there was a certain beggar named Lazarus, which was laid at his gate, full of sores,

21 And desiring to be fed with the crumbs which fell from the rich man’s table: moreover the dogs came and licked his sores.

22 And it came to pass, that the beggar died, and was carried by the angels into Abraham’s bosom: the rich man also died, and was buried;

23 And in hell he lift up his eyes, being in torments, and seeth Abraham afar off, and Lazarus in his bosom.

If we still remain in our sins, we will be separated from God for ever. Would we be like the rich man who  was described as

  … also died, and was buried; 

And in hell he lift up his eyes, being in torments …

 

Be concerned about your soul also. Because it’s a matter of eternity. We take care of our bodies by having good nutritious food and exercise. But finally the body will return to dust at our death. Make sure your soul is not lost. There is no point in regretting after death as we can live only one life on earth and there is no coming back. 

How can I come to God? How can I be a child of God?

First of all, we can’t come to God directly. Just think about the head of our country. Can we just go and meet them? We can meet them if we have an invitation. God is the supreme most power and the highest in authority in the whole universe. We can come to God only in His own terms, not ours.

God reveals of Himself as – 13  of purer eyes than to behold evil, and canst not look on iniquity – Habakkuk 1:13

No one with iniquity or sin can come to His presence. We can come to God after being cleansed from our sins. We cannot cleanse ourselves from our sins.

God sent His ONLY begotten son Jesus Christ into this world so that ANYONE who believes in Him should not perish, but should receive everlasting life. If ANYONE believes in JESUS and repents of their own sins and asks JESUS to forgive their sins; He being God himself, has the power to forgive sins. Only the true God can forgive the sins of mankind. Jesus being God who came to earth in the form of human alone has the power to forgive our  sins.

Be truthful to yourself and do repent of your sins. Pray to Jesus. He knows our heart.

He has promised in His word – in the Holy bible.  If we confess our sins, He is faithful and just to forgive us our sins, and to cleanse us from all unrighteousness..

For it is not possible that the blood of goats and bulls should take away sins.

Without shedding of blood, there is no remission of sin. In JESUS alone, we have redemption from our sins through His blood shed on the cross, and the forgiveness of sins and complete freedom from sin’s bondage on us.

With repentance tell all your sins to Jesus. Jesus understands all your needs. He will forgive and all your sins will be cleansed. You will receive eternal life and you can be assured that you are in the right way to heaven.

JESUS – the meaning of the name is – the one who saves the people from their sins.

 

The blood of Jesus Christ his Son cleanseth us from all sin.

If we say that we have no sin, we deceive ourselves, and the truth is not in us.

If we confess our sins, he is faithful and just to forgive us our sins, and to cleanse us from all unrighteousness. – 1 John 1:7-9

 

But as many as received him, to them gave he power to become the sons of God, even to them that believe on his name – John 1:12

 

For ye have not received the spirit of bondage again to fear; but ye have received the Spirit of adoption, whereby we cry, Abba, Father. 

The Spirit itself beareth witness with our spirit, that we are the children of God – Romans 8:15,16

When your sins are cleansed, you become a child of God and then you can come to God, our Heavenly Father.

Mushroom coconut curry

The coconut powder fried till golden brown is the ingredient which makes this sauce so flavourful. A delicious curry with the goodness of coconut and nutritious mushrooms.

Ingredients

  • 3 tbsp coconut powder
  • 1/4 onion finely chopped
  • 1 tsp red chilli powder
  • 2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1 onion finely sliced
  • 2 green chillies
  • 300 grams Mushrooms
  • 1 tomato chopped finely
  • 1 tablespoon of vegetable oil
  • 1 cup water

Instructions

  1. Fry both (3 tbsp coconut powder and 1/4 onion finely chopped) on small flame (until golden brown)
  2. Add 1 tsp chill powder, 2 tsp coriander powder, 1/4 tsp turmeric powder and grind dry in grinder to smooth paste
  3. Pour a tablespoon of vegetable oil in a heavy-bottomed saucepan
  4. Saute (1 onion finely sliced,2 green chillies, Mushrooms) on a low flame.
  5. Blend ground paste and water, and add to above sauteed mixture.
  6. Add the chopped tomato.
  7. Boil on medium flame and bring to boil.
  8. Reduce flame once boiled and simmer till the curry reach the desired consistency.
  9. Serve hot with rice or chapati.

Ingredients

  • 1/4 cup (1.5oz or 50 grams) white chocolate bar chopped
  • 1/4 cup (60 ml) Heavy cream/Double cream at room temperature.

Instructions

  1. Melt the white chocolate in the ramekin for 30sec. If not melted, mix and again microwave for further 15 sec. If required, microwave again for next 15sec. Do not over heat as it might burn the chocolate.
  2. Mix the white chocolate well.
  3. Add the double cream to this, mix and microwave for another 20sec.
  4. Mix well so that the cream and white chocolate is mixed well uniformly.
  5. Add optional marshmallows.
  6. Allow it to set in Fridge and Enjoy it..Yumm... 🙂

Notes

This dessert can be made ahead and can be enjoyed upto 2 days.

If required, reduce the chocolate quantity for a less sweet dessert.

The above recipes is for 900 Watt microwave. Microwave power settings can differ, so please make sure to adjust timings accordingly.

  • 2 Oatmeal deli rolls
  • Few chunks of cooked chicken breast seasoned with salt and pepper. Cut to 1-2" pieces 2.5-5 cm - Oven roast chicken breast fillets
  • 1 diced Avocado
  • Cheese spread

Can’t eat just one Banana cupcake

A light and moist banana cupcake! It’s moreish and you would just be like me -Can't eat just one and reach out for the next one. If you prefer, do add cinnamon and walnuts to this Banana cupcake and Enjoy! This yummy Banana cupcake can be made with plain flour and gluten free flour. There is Vegan option also - 1 tablespoon of ground flaxseed and 3 tablespoons of water to replace 1 egg or else use the Egg replacer as per the pack instructions ( link in Recommended products.)

Ingredients

  • Note : To make Self-Rising flour at home - Add 2 teaspoons of baking powder for each 150g / 6oz / 1cup plain flour (or G.F). Add the plain flour and baking powder into a bowl and whisk well. Self-Rising flour is ready.Then please follow the instructions as below to make the cupcakes.
  • Dry ingredients
  • 1¼ cup (140g) Self-Rising flour (or gluten-free Self-Rising flour)
  • 1 teaspoon baking powder (use gluten free for gluten free option)
  • ⅔ cup (135g) sugar
  • ¼ teaspoon salt
  • Wet ingredients
  • ⅓ cup (80ml) Vegetable oil (Sunflower oil)
  • 2 medium sized bananas mashed (140g)
  • 2 medium eggs ( Vegan option - 1 tablespoon of ground flaxseed and 3 tablespoons of water to replace 1 egg.)

Instructions

1.     Pre-heat oven to 400°F (180°C Fan – 200°C – Gas 6). 

2.     Prepare 12 silicone cupcake moulds. Alternatively use a 12 cupcake tray with cases.

3.     Mash 2 medium sized bananas. (140 grams)

4.     Mix well all the listed dry ingredients in one bowl.

7.     Pour the mixture into the prepared cupcake cases.

Ingredients

  • 2 cups or 8 1/2 oz or 250 grams dry spaghetti
  • Crushed red chilli flakes as per your tolerance level
  • 4 celery sticks cut into half moon shapes
  • salt as per your taste
  • olive oil

Instructions

  1. Cook the spaghetti following pack instructions.
  2. Drain and toss with olive oil.
  3. Add chopped celery, salt and crushed red chilli flakes.
  4. Mix well.
  5. If it seems a little dry, add a little more olive oil before serving. Enjoy!

Oven roast chicken breast fillets in 30 mins. Alternatively can also use chicken thighs and wings.

Ingredients

  • 2 chicken breast fillets
  • Salt and pepper to season.

Instructions

1.     Preheat oven to 200C/180C(Fan)/ 400F/Gas Mark 6. 

2.     Meanwhile season the chicken breast fillets with salt and pepper. 

3.     Wrap loosely in foil. Place on baking tray and put in oven for 25-30 mins.

4.     Make sure the chicken fillets are fully cooked and juices run clear before eating.

5.     Serve along with green salad leaves
