Ingredients

  • 10 chicken pieces bone-in (can be Chicken thighs or drumsticks or mix)
  • 6 large potatoes cut into 1 inch cubes
  • 3 Tbsp vegetable oil
  • 2 tsp ginger chopped optional, but preferred
  • 1 tsp garlic chopped optional, but preferred
  • 2 large red onions finely chopped
  • 3 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 can (400g) chopped tomatoes
  • 4 tsp garam masala or curry powder
  • 1/2 tsp Black pepper powder to season
  • Salt to season
  • To garnish
  • Handful Coriander leaves/ Cilantro chopped

  1. Heat the oil in a wok or heavy-bottomed saucepan over a medium heat.
  2. Add the chopped ginger, garlic and sliced onions along with a pinch of salt and cook slowly on low heat until the onion is translucent. It might take approximately 10 mins.
  3. Add the red chilli powder, turmeric powder, pepper powder, 3 tsp garam masala powder to the sauteed mixture and mix well for 30sec.
  4. Add the can of chopped tomatoes to this mixture and mix well.
  5. Add 3 cups of water and 1 tsp of salt and increase the heat to medium and allow to boil.
  6. Add the chicken pieces and potatoes and mix well.
  7. On medium heat, let the chicken and potatoes get cooked well for 20-30 mins.
  8. Taste and if required at this stage add black pepper powder and salt and mix well.
  9. At this stage, add 1 more tsp of garam masala or curry powder and mix well.
  10. Switch off the heat when dish has the desired consistency. If require a much thick curry, allow to simmer till the water content is reduced further.
  11. Add handful of chopped coriander leaves and close the pan.
  12. Serve warm and enjoy this chicken and potato curry!
